Not long ago, but just long enough to make a man feel old, a fifteen year old kid walked up to a shack on the side of a road looking for a job. This wasn't your average shack, but one known county-wide for its legendary pulled pork sandwiches. The kid charmed his way into a job and under the watchful eye of the owner was revealed the secret world of barbeque. The boy eventually earned the respect of the owner through hard work and physical labor and was granted the right to "man the pit." Building the proper fire, shuffling pork butts, chicken and ribs were more than just his daily duties, they became his religion. Time moved on and eventually the kid wondered if there was more to the world than just pulled pork and the endless conversation of the ladies working the front window. The young man's name was Josh Daugherty, and over the next fifteen years he trained at the best restaurants on Florida's Gulf Coast, eventually becoming an Executive Chef himself. What Josh didn't know was that the sweet smell of wood smoke had rooted itself into his memories and into the soul itself, inspiring him to leave upscale cuisine behind and pursue his original culinary passion – the beautiful simplicity of slow roasted, pulled pork.
